Today I woke up wanting to eat something really colorful. So I came up with this recipe of spinach crepes.
The sauce is a joker, as you can make it to put in your lasagnas, Tapas, Panadillas or even to turn into hamburgers.
So, first things first. Here are the ingredients for the crepes:
For vegetarians:
- 350 g of wheat flour
- 1 egg
- 200 ml of rice milk
- 200 ml of milk
- salt
- 2 handfuls of spinach
*Next time I'll try a vegan option for these crepes!
Put everything in your blender until you have an homogeneous mixture. Add some water in case it is too creamy/thick.
In a pan, put some oil so that the crepes don't stick. Pour 1 ladle into it, once it is "dry" flip it and let it cook for 1 minute.
That's how it should look like:
Ingredients for the sauce:
2 onions
Garlic
1 eggplant
1 green, yellow or red pepper
Tomato sauce
2 glasses of red wine
1 and 1/2 cup of soy
1 cup of quinoa
Soy sauce
Sweet Paprika powder
Curcuma
Black pepper
3 tbsp of Olive oil
Salt
Start by putting the oil into a pan. Add the quinoa and the soy. A minute later pour the wine and the soy sauce. After 2 minutes add all the other ingredients, chopped into very small pieces, and let it all cook over medium heat for about 15 to 20 minutes. You may have to add some water so that the sauce doesn't get dry. Taste it and adjust the quantity of spices and salt to your taste.
Put the sauce in the middle of a crepe and roll it. Place it into a plate and sprinkle some cheese on the top:
